Risotto with zucchini and sundried tomatoes recipe details
Ingredients
100 g | rice, Arborio |
4 | shallots |
2 tbsp | olive oil |
4 medium | zucchini squash |
12 | sundried tomato halves, not packed in oil |
120 ml | dry white wine |
800 ml | vegetable or chicken broth/stock |
120 ml | tomato juice |
½ bunch(es) | parsley, fresh |
2 tsp | marjoram, dried |
¼ tsp | black pepper, freshly ground |
2 tbsp | Parmesan cheese, freshly grated |
Instructions
Finely dice the shallots and the tomatoes, cut zucchini into 1×1 cm cubes. Chop parsley.In a medium saucepan, bring tomato juice and stock to a boil, reduce heat and simmer.
In another medium saucepan, heat olive oil over medium heat and sweat shallots until tender.
Add rice and cook for about 2 minutes, stirring constantly. Add white wine, tomatoes, marjoram and zucchini. Cook until liquid is absorbed, then add a ladle full of the hot stock and tomato juice mixture. Cook until all liquid has been absorbed, stirring constantly to make sure risotto does not burn. Add another ladle full of liquid, and continue this process until all the liquid has been used up and rice is done. This process should take between 25 and 30 minutes total.
Add parsley, cheese and pepper, stir and serve. You may substitute additional broth for the wine if desired.
