Risotto with swiss chard recipe details
Ingredients
1 | onion, chopped |
250 g | risotto rice |
200 g | Swiss chard |
50 g | freshly grated Parmesan cheese |
8 leaves | sage |
100 g | goat’s cheese |
1 clove(s) | garlic, minced |
1 tbsp | butter |
200 ml | white wine, dry |
salt and freshly ground black pepper | |
500 ml | vegetable stock |
2 tbsp | oil |
Instructions
In a saucepan, melt the butter. Sauté the onion and the garlic. Add the rice and cook stirring for 2-3 minutes. Pour in the wine and half of the stock and bring to a boil. Reduce the heat and cook for 20 minutes, stirring frequently. Occasionally add some of the remaining stock.Cut the chard into stripes. Stir the chard and the Parmesan into the risotto and cook stirring for another 5 minutes. Season to taste with salt and pepper.
In a pan heat the oil and fry the sage leaves until crispy. Crumble the goat’s cheese over the risotto and serve garnished with the sage leaves.
