Ingredients

200 g fresh peas, shelled
120 g basmati rice
240 g strong chicken stock
4 sprig(s) parsley, finely chopped
2 leaves mint, finely chopped
butter

Instructions

Bring the rice with the chicken stock to a boil and cook covered over low heat for 15-20 minutes or until the rice is done. Add the freshly shelled peas and the herbs and a generous knob of butter and cook for another 5 minutes.

Toss gently, season to taste with sea salt and serve.
