Rice with asparagus recipe details
Ingredients
500 g | green asparagus, cut into bite-sized pieces |
1 | onion, chopped |
250 g | rice |
2 clove(s) | garlic, minced |
25 g | butter |
1 glass(es) | dry white wine |
700 ml | vegetable stock or more |
salt and freshly ground black pepper |
Instructions
In a large pan melt the butter and sauté the onion and the garlic. Add the rice and cook until lucent.Pour in the wine and cook over low heat for a few minutes. Pour in the stock and bring to the boil. Cook over low heat for 15 minutes. Add the asparagus and cook until the stock has evaporated. If the rice is still a bit too firm, add more stock by and by and cook until the rice is done.
Season to taste with salt and pepper.
