Asparagus Feta Salad recipe

Ingredients
200 g | pasta, (penne) |
500 g | asparagus, green |
125 g | feta |
125 g | ham |
½ | lemon juice |
5 tbsp | olive oil |
¼ tsp | salt and pepper to taste |
Instructions
Prepare pasta according to the package directions.
In the meantime clean the asparagus, cut of the bottoms (about 2-3cm), cut in small pieces (2cm), set aside.
Crumble the feta and cut the ham into small squares.
Juice the lemon, set aside.
When the pasta is done, pour the pasta into a sieve, save the hot cooking liquid in another pot. Rinse the pasta under cold water to cool down. When the pasta is cold, put the pasta into a medium bowl.
Bring that water to a boil again and cook the asparagus for 5-10 minutes al dente. Once the asparagus is done, pour it into a sieve and rinse with cold water to cool down.
Add asparagus to the pasta; add the feta and the ham. Sprinkle with salt, add pepper, the olive oil and the lemon juice last. Stir carefully, add salt and pepper to taste.
Put in the refrigerator for 1/2 hour. Served with some ciabatta or crusty white bread, this is a quick and refreshing salad.
