
Rice salad
Rice Salad recipe
- Ingredients
- 1 cup sliced mushrooms
- Juice of 1 lemon
- 2 cups cooked rice, cooled
- 2 cups spinach leaves
- 1/3 cup raisins
- 1 cup bean sprouts
- 3 stalks celery, sliced
- 1 red or green pepper, chopped
- 2 Tablespoons parsley
- 1/4 cup shallots
- 1 cup cashews
- 1 cup lettuce
- 1/4 cup soy sauce
- 1/2 cup olive oil
- 1 to 2 cloves garlic, minced
Pour lemon juice over mushrooms. Combine with rice, spinach, raisins, sprouts, celery, bell pepper, parsley, shallots, cashews, and lettuce. Combine soy sauce, olive oil, and garlic; shake well and pour over salad.
Serves:6 or more
