Rice pilaf details
- Ingredients
- 1 cup raw white rice
- 3 Tablespoons butter
- 1 Tablespoon minced onion
- 1 Tablespoon minced celery
- 1 Tablespoon minced carrot
- 1/4 teaspoon dried thyme or dill
- 1/4 teaspoon black pepper
- 3 cups good quality, strong chicken stock or bouillon
Preheat oven to 350 degrees. Heat the butter over medium flame and saute vegetables for 1 to 2 minutes. Add the rice and seasonings and continue sauteing for 2 to 3 minutes. Add stock and stir to blend. Transfer rice mixture to a baking dish and bake, covered, until rice has absorbed all liquid, approximately 45 minutes. Can add mushrooms if desired.
