Rice pudding with cherry sauce recipe details
Ingredients
80 g | shredded coconut |
400 ml | condensed milk |
400 ml | coconut milk |
800 ml | milk |
4 medium | eggs |
2 sachet | ginger, chopped |
300 g | rice |
½ tsp | salt |
Cherry sauce: | |
150 g | frozen or canned cherries, pitted |
350 ml | cherry perserves |
grated zest of 1 lemon |
Instructions
Preheat oven to 180°C.Place the shredded coconut in a thin layer on a baking sheet. Bake for 6 to 8 minutes, stirring frequently, until lightly browned.
Grease a slow cooker with butter and set aside.
Whisk together coconut milk, condensed milk, milk, eggs, and ginger. Stir in rice and toasted coconut.
Pour mixture into slow cooker, cover, and cook on low heat for 3 to 4 hours.
In a small saucepot over medium heat combine all ingredients for the cherry sauce and mix until combined. Cook until heated through.
To serve top rice pudding with cherry sauce.
