Rice pudding with an aromatic syrup recipe details
Ingredients
600 ml | full-fat milk |
75 g | ground rice |
120 ml | water |
75 g | sugar |
chopped or flaked almonds, to garnish | |
For the syrup: | |
325 g | sugar |
200 ml | water |
1 tsp | lemon juice |
¾ tsp | orange flower water |
Instructions
If you are unable to obtain ground rice locally, you can grind white rice in a coffee grinder or blender until fairly fine, roughly similar to caster sugar.Warm the milk in a pan.
Whilst the milk is warming, soak the rice in the water. Add the rice water to the warmed milk and stir constantly to prevent it burning. Once the mixture begins to thicken to a pudding-like consistency, slowly add the sugar whilst still stirring to avoid lumps.
Continue cooking and stirring until the pudding is thick enough to stick to the spoon or spatula.
Serve hot in bowls with a light drizzle of the syrup and a sprinkling of nuts.
Place syrup ingredients in a small pan and stir repeatedly until sugar is completely dissolved. Reduce heat and simmer for 15 minutes until syrup becomes quite thick. Drizzle whilst warm. Allow to cool and store in bottle or other sealed container. Warm to reuse. Serves 4-6.
Surplus puddings may be refrigerated if necessary, but reheat before serving.
About the recipe:
This uses a thick syrup scented with orange flower water. Similar syrups are used with Baklava and for many other desserts in the Middle-East.
