Ingredients

For the dough:
250 g flour
125 g butter, soft
70 g sugar
1  egg yolk
For the Filling:
150 g rice pudding
¾ l milk
1 pack(s) vanilla sugar
salt
40 g butter
2  egg yolks
100 g sugar
3  egg whites
brandy
½ cup(s) icing sugar

Instructions

In a bowl, combine the dough ingredients and knead until well combined. Cool for 1 hour.

In a saucepan, combine the rice, salt, milk and the vanilla sugar. Cook over low heat for 20 minutes. Mix together the butter, sugar and the egg yolk. Season with brandy. Stir in the rice pudding. Whisk the egg whites until stiff. Fold into the rice mixture.

Preheat the oven to 190° C.

Roll out the dough. Arrange the dough into a buttered cake form. Bake for 20-25 minutes. Fill the cake with the rice pudding. Bake for 30 more minutes. Allow to cool and serve sprinkled with the icing sugar.
