1/2 stick (1/4 cup) butter
1/4 small onion, chopped
1 cup slivered almonds
1 can sliced mushrooms
2 cans beef consomme
1/2 pound shredded cheddar cheese
1-3/4 cups instant rice (Minute Rice)

Saute onion in butter. Toast almonds and add to onions. Mix in mushrooms, consomme, and rice. Bake in covered casserole dish at 325 degrees for 1-1/4 hour. This recipe can also be cooked in the microwave on high power for 30 to 35 minutes. Use as a side dish for eggs.

Makes: Twelve 1/2-cup servings
