Ingredients

300 g brown sugar
150 ml oil
1 medium egg(s)
230 g buttermilk
1 tsp baking soda
1 tsp salt
1 tsp vanilla
250 g flour
60 g nuts, chopped
300 g rhubarb, finely diced

Instructions

Mix all ingredients except the nuts together.

Either use paper-lined muffin tins or a cake pan. Fill the muffin tins 2/3 full and spinkle the nuts on top.

Bake at 200°C for about 20-25 minutes.
