Rhubarb creamsicle pie recipe details
A family favorite. A variation on my aunt’s strawberry rhubarb pie. Serve topped with vanilla ice cream.

Ingredients
Serves: 6- 3 cups rhubarb
- your favorite upper and lower pie crust
- 2 eggs beaten
- 1.5 cups sugar
- 1 tbs unsalted butter, melted
- 1 tsp nutmeg
- 2 tsp flour
- 1 orange zest
Preparation method
Prep: 15 mins | Cook: 40 mins1. Preheat oven to 350 degrees F (!75 degrees C). Cut rhubarb into 1 inch segments and add to pie crust.
2. Add eggs, sugar, butter, nutmeg, flour, and orange zest into bowl and mix evenly
3. Pour mixture over rhubarb and top with orange zest.
4. Cover with pie crust topper.
5. Bake at 350 degrees for 30-40 minutes. Let stand for 10 minutes.
