Ingredients
Serves: 6- 1 cup plus 3 tablespoons finely crushed Triscuits(R) or other crackers
- 1 tablespoon rye or all-purpose flour
- 2 tablespoons plus 1-1/2 teaspoons butter, melted
- 5 green onions, chopped
- 1 tablespoon butter
- 1-1/2 cups (6 ounces) shredded Swiss cheese, divided
- 1 (2-1/2 ounce) package deli corned beef, cut into 2-inch strips
- 1/2 cup sauerkraut, well drained
- 4 eggs
- 1 cup half-and-half cream
- 1 tablespoon all-purpose flour
- 1/2 teaspoon ground mustard
- 1/4 teaspoon salt
Preparation method
Prep: 25 mins | Cook: 25 mins1. Preheat oven to 375 degrees F.
2. Make the crust by stirring together crumbs, flour, and butter in a mixing bowl. Press into a 9-inch pie plate, covering the bottom and some of the sides as well. Bake for 8 minutes.
3. Melt butter in a skillet over medium heat. Cook onions in the melted butter for about 6 minutes, then remove from heat.
4. Distribute 1/2 cup cheese over the cooked crust, then cover with corned beef and sauerkraut. Sprinkle with remaining cheese.
5. In a mixing bowl, whisk together the eggs, cream, flour, mustard, salt, and sauteed onions. Pour over the corned beef mixture in the crust, then bake the quiche for 25 to 30 minutes. Allow to set for 5 minutes, then slice to serve.
