Rhubarb Coffee Cake with Vanilla Sauce recipe
- Ingredients for Cake:
- 1 cup sugar
- 1 egg
- 2 Tablespoons melted margarine
- 1 cup buttermilk
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1-1/2 cups chopped rhubarb.
- Ingredients for Topping:
- 2 Tablespoons melted margarine
- 1/2 cup sugar
- Ingredients for Vanilla Sauce:
- 3/4 cup sugar
- 1/2 cup margarine
- 1/2 cup evaporated milk
- 1 teaspoon vanilla
Instructions:
Cake: Blend 1 cup sugar, egg, 2 Tablespoons melted margarine and buttermilk together with a whisk. Add flour, baking powder, baking soda, salt and mix well. Stir in chopped rhubarb. Pour into pan. Mix Topping ingredients with a fork and crumble over cake batter. Bake at 360 degrees for 1 hour.
Vanilla Sauce: Mix sugar, margarine and milk in saucepan. Bring to rolling boil. Cook 1 minute, stirring constantly. Remove from heat and add vanilla.
