- Ingredients
- 1-1/2 cups sugar
- 2/3 cup butter
- 3 eggs
- 2 cups rhubarb
- 3 cups flour
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon nutmeg
Cream sugar and butter; add eggs and rhubarb. Sift and mix all dry ingredients. Add all together. Bake in 350-degree oven for 45 to 50 minutes. Batter should be stiff and somewhat dry; if not, add some flour. A “liquidy” batter will result in a heavy/flat cake. When done, rub some butter over top for a glaze. Serve plain or with strawberry jam.
