Redcurrant cake with meringue topping recipe details
Ingredients
300 g | redcurrants |
3 | egg yolks |
150 g | icing sugar |
1 pack(s) | vanilla sugar |
3 tbsp | water |
60 ml | milk |
250 g | flour |
½ pack(s) | baking powder |
50 g | soft butter |
6 | egg whites |
200 g | sugar |
1 pack(s) | vanilla sugar |
Instructions
Preheat the oven to 170° C.Whisk the egg yolks with butter, icing sugar, vanilla sugar, water and the milk until frothy. Fold in the sieved flour and the baking powder. Divide the batter on a buttered baking tray and bake for 20 minutes.
Divide the redcurrants on the cake base. Whisk the egg whites with the sugar until stiff and glossy. Spread over the redcurrants and create little peaks on the surface. Bake for 15 minutes.
