Chile powder adds a little heat to these beans. Note: you’ll need to start with cooked navy beans.

Ingredients

Serves: 4
  • 4 slices lean bacon, cut crosswise into thin strips
  • 1 cup finely diced Spanish onion
  • 1 large clove garlic, minced
  • 1 pound cooked navy beans
  • 3/4 cup ketchup
  • 1 cup packed dark brown sugar
  • 1 tablespoon pure ground mild red chile
  • 1 teaspoon mustard powder

Preparation method

Prep: 10 mins | Cook: 3 hours

1. Preheat oven to 325 degrees F.
2. In a heavy skillet, fry the bacon strips over medium-high heat until crisp, about 8 minutes. Remove and set aside. Add onion and garlic, and continue cooking until the onion is translucent but not browned, about 8 minutes.
3. Transfer the bacon, onion, and any fat that may have accumulated to a mixing bowl. Toss with remaining ingredients and combine well.
4. Pour the mixture into an ungreased 2-quart baking dish and bake, uncovered, for 2 1/2 to 3 hours. Serving Suggestions
