Red pepper and halibut kebabs recipe details
Ingredients1. Halibut steaks, cut into 1 inch cubes (1 1/2pounds)
2. olive oil (4tbsp)
3. sugar (2tbsp)
4. finely chopped fresh cilantro (3tbsp)
5. olive oil (4tbsp)
6. fresh lime juice (1/2c)
7. red onion, cut into 1 inch squares (1large)
8. bell pepper, cut into 1 inch squares (1large)
9. minced Serrano pepper (1 1/2tsp)
Method of preparation
1. Take a small bowl, mix 2 tablespoon of olive oil, lime juice, cilantro, sugar and bell pepper in it. Mix it properly until the sugar gets completely dissolved. Keep it aside for about 1 hour to blend the flavors.
2. Preheat the grill, take a metal skewer and then thread the halibut pieces and vegetables alternating in it. Brush the kebabs with remaining 2 tablespoons of olive oil and then place the kebabs on the hot grill.
3. Grill it from each side for about 1 1/2 minutes or about 6 minutes. The halibut should be opaque and flaky. Take it off from the grill and then serve it.
