Ingredients

2 tbsp olive oil
2  red onions, sliced
1 tsp sugar
2 tbsp balsamic vinegar
2 tbsp black olives, pitted, halved
2 tbsp butter
salt and pepper, to taste

Instructions

Heat the oil in a saucepan and stir in the onions to coat them with oil. Sprinkle with sugar and cook for 5 minutes or soft. Add the vinegar and olives, season and simmer for a further 2 minutes.

Remove from heat and stir in the butter. Season to taste with salt and pepper.

Serve this sauce with warm or cold pasta.
