Onion bhaji recipe details
Ingredients
300 g | gram flour |
½ tsp | baking powder |
1 tsp | turmeric |
1 tsp | ground coriander |
½ tsp | garam masala |
½ tsp | salt |
chilli powder | |
5 tbsp | sunflower oil |
750 ml | oil for deep-frying |
400 g | onions, peeled and cut into thin rings |
400 g | yoghurt |
150 g | sour cream |
½ bunch(es) | parsley, chopped |
Instructions
Mix the yoghurt with the sour cream and the parsley. Season to taste with salt, turmeric and chilli powder.In a bowl, mix the gram flour with baking powder, the spices, salt, the sunflower oil and a glass of water and work with the hooks of your electric mixer until a smooth and thick batter has formed. If too firm, add more water. Stir the onion rings into the batter.
In a saucepan, heat the oil and deep-fry tablespoonfuls of the mixture until golden and crispy. Drain on kitchen paper and serve with the yoghurt sauce.
