Red lentil soup with coconut cream recipe details
Ingredients
1 small | onion, chopped |
4 clove(s) | garlic, minced |
2 tbsp | olive oil |
200 g | red lentils |
800 ml | chicken broth |
500 ml | water |
120 ml | coconut cream |
1 tbsp | cumin |
salt and pepper, to taste |
Instructions
Sauté onion and garlic in oil for 1 minute. Stir in red lentils, add chicken broth and water. Bring to a boil over medium heat. Stir in coconut cream, cumin and season with salt and pepper.Cook for 30-40 minutes or until lentils are soft.
