Red fruit jelly with vanilla sauce recipe details
|¼ l||red wine|
|200 g||morello cherries, pitted|
|170 g||red currants|
|200 g||strawberries, halved|
|1||vanilla pod, cut in half and black seeds scraped out|
|40 g||custard powder|
|8 tbsp||brown sugar|
InstructionsIn a saucepan, combine the red wine, half of the sugar, honey and the cinnamon. Bring to a boil. Add the cherries, red currant and ½ of the vanilla seeds. Mix the custard powder with a little water and stir until smooth. Stir this into the cherry mixture and cook for 5 minutes. Stir in the raspberries and the strawberries. Remove from the heat transfer into a serving bowl and allow to set in the refrigerator.
Bring the milk with a pinch of salt and the remaining vanilla seeds to a boil. Remove from the heat. Whisk the egg yolks and the remaining sugar until frothy. Bit by bit stir in 6 tablespoons of the hot milk mixture. Add this to the vanilla milk and whisk until well combined. Allow to cool.
Serve the red fruit jelly with the vanilla sauce.
