Red Cabbage with Apple recipe

|700 g||red cabbage, cut into chunks|
|1 large||cooking apple, peeled, cored, chopped|
|1 medium||onion, chopped|
|1 tbsp||olive oil|
|salt and pepper, to taste|
In large sauce pan, combine all ingredients and add enough water to cover. Bring to boil, then reduce heat and simmer, covered, for 1 hour or until tender.
