Red cabbage soup with cumin recipe details
Ingredients
2 tbsp | clarified butter |
1 tsp | cumin |
1 pinch(es) | cardamom |
1 tsp | ginger powder |
½ tsp | ground coriander |
1 pinch(es) | freshly ground nutmeg |
1 pinch(es) | cinnamon |
1 pinch(es) | clove powder |
750 g | red cabbage, finely shredded |
salt and pepper | |
100 g | crème fraîche |
2 tbsp | lemon juice |
fresh herbs, e.g. coriander or parsley, finely chopped |
Instructions
In a skillet, heat the clarified butter and sauté the condiments.Add the cabbage and 1 liter of water and bring to the boil. cook for 20 minutes or until the red cabbage is soft. Season to taste with salt and pepper.
Purée the soup with a hand blender. Mix the Crème fraîche with the lemon juice,
Ladle the soup into 4 soup plates, garnish each with a dollop of the Crème fraîche, sprinkle with herbs and serve.
