Cabbage stew with beetroot and beef tenderloin recipe details
Ingredients
500 g | white cabbage, shredded |
250 g | beetroot, peeled and sliced |
250 g | parsley root, peeled and sliced |
2 tbsp | oil |
1 tsp | caraway |
1 | bay leaf |
250 ml | beef stock |
250 g | beef tenderloin, cut into 3cm cubes |
1 large | gherkin, sliced |
½ bunch(es) | parsley, chopped |
2 tbsp | red wine viengar |
50 g | capers |
200 g | sour cream |
salt |
Instructions
In a large pan heat the oil and fry the cabbage until browned, stirring occasionally. Add caraway, bay leaf, a pinch of salt and 125ml of the stock. Cover and cook for 10 minutes.Shove the cabbage to the edges of the saucepan. Put beetroot and parsley root into the middle and season with salt and vinegar. Add the remaining stock, cover and cook until the beetroot is nearly tender. Add the beef, capers and gherkins, toss and steam covered for 5 minutes. Fold in the parsley and season to taste with salt and vinegar.
Divide the stew among warmed plates and serve with a dollop of sour cream on top of each.
