Red cabbage grandma style recipe details
Ingredients
1 kg | red cabbage, fresh, finely chopped |
125 ml | red wine |
1 tbsp | brown sugar |
1 tsp | ginger, finely chopped |
1 tsp | cinnamon |
4 | cloves, crushed |
6 tbsp | cranberry jam |
6 tbsp | red currant jam |
1 | apple, diced |
150 ml | whipped cream |
4 leaves | bay |
salt | |
pepper |
Instructions
Trim the outer leaves of the red cabbage head and chop the whole head finely.In a big pot combine the red cabbage together with the red wine and cook for about 15 to 20 minutes on a low heat.
Then add the apple, sugar, ginger, cinnamon, cloves, bayleaves, salt, pepper, cranberry and red currant jam.
Cook for about 45 minutes or up to 60 minutes. Make sure that everything is cooked long enough so that it is smooth.
At the end add the whipped cream and taste it to see if the seasoning needs to be adjusted.
Hint: Leave this dish sit overnight to let the flavours develop.
