Ingredients

1  baked pastry shell
800 g raspberries, fresh or frozen
100 g sugar
120 ml cold water
3 tbsp lemon juice
3 tbsp cornstarch
180 ml whipping cream
2 tbsp sugar

Instructions

In a medium saucepan, stir together 300 g raspberries, sugar, cold water, lemon juice, and cornstarch. Cook and stir over medium heat until thickened. Remove from heat and cool slightly. Cover and refrigerate until thoroughly chilled.

Add another 300 g raspberries into the chilled mixture and mix. Spoon into pastry shell, cover and place in fridge for at least 2 hours.

In medium bowl, combine whipping cream and the 2 tablespoons sugar. Beat until stiff. Serve pie with whipped cream and remaining raspberries for garnish.
