Raspberry cream puffs recipe details
Ingredients
125 ml | milk |
1 pinch(es) | salt |
75 g | butter |
200 g | strong plain flour |
5 medium | eggs |
200 g | raspberries, frozen, thawed |
300 g | whipping cream |
8 tbsp | sugar |
100 g | dark chocolate, chopped |
Instructions
Bring the milk with 125ml water, salt and butter to a boil. Add the flour in one and stir vigorously with a wooden spoon until you have a smooth ball of paste that has left the sides of the saucepan clean. Transfer the pastry into a bowl. Whisk the eggs well, then beat them into the pastry, a little at a time, mixing each addition in thoroughly before adding the next.Fill the pastry into a piping bag with fluted nozzle. Pipe approximately 12 puffs onto a lined baking tray. Bake in the preheated oven at 200°C for 25-30 minutes. Halve the puffs immediately and allow to cool.
Pass the raspberries through a sieve. Whip the cream with the sugar until stiff. Set aside 4 tablespoons of the raspberries purée. Fold the remaining raspberry purée into the cream. Spread each lower half of the puffs generously with the cream. Drizzle with the remaining raspberry purée. And place the upper half of the puffs on top.
Melt the chocolate. Garnish the puffs with the melted chocolate.
