Rainbow pepper frittata recipe details
- Ingredients
- 2 Tablespoons melted butter
- 2/3 cup chopped peppers (red, orange, and green for nice color)
- 18 eggs
- 1 cup milk
- 1 cup sour cream (can use low fat)
- 1 teaspoon lemon pepper
- 1/2 teaspoon dillweed
Preheat oven to 350 degrees. Melt butter in frying pan and saute vegetables just until tender. Spray 9 x 13-inch pan with oil. Add vegetables with their liquid. Beat eggs, milk, sour cream, and seasonings in mixer until well blended and frothy. Immediately pour over vegetables. Sprinkle with paprika if desired.
Bake at 350 degrees for 30 to 40 minutes or until set. Comes out of the oven all puffed beautifully, so make sure your guests are there to appreciate your efforts!
