Ingredients

1 kg vension, cut in 3cm cubes
125 g bacon, diced
2 tbsp butter
salt and freshly ground black pepper
375 g onions, chopped
1  carrot, sliced
2 tbsp flour
1 tbsp tomato puree
250 ml red wine
1 tbsp instant vegetable stock
1 tsp thyme
2  bay leaves
1 bunch(es) parsley, chopped
1 tsp paprika powder
250 g mushrooms, sliced
2 clove(s) garlic, mashed
500 ml water

Instructions

In a saucepan, melt 1 tablespoon of butter. Add the bacon and fry for 5 minutes. Remove from the pan and set aside. Stir in the venison and fry over medium heat for 10-15 minutes. Season with salt and pepper. Remove from the pan and set aside.

Add half of the onions, garlic and the carrot. Fry over medium heat for 10 minutes, stirring occasionally. Add the bacon and venison. Dust with the flour and cook for 2 minutes. Stir in the tomato purée and cook stirring another minute. Add water, wine, instant stock, thyme and the bay leaves and bring to a boil. Reduce the heat, cover and simmer for 60 minutes or until the venison is tender.

In a pan, melt the remaining butter. Add the remaining onions and the mushrooms. Cook over medium heat for 5 minutes. Season with salt and pepper. Add the mushrooms to the ragout and cook for 5 more minutes. Stir in the paprika powder and the parsley. Season to taste with salt and pepper.

Serve with white bread or potatoes.
