Ingredients

2  rack of lamb, best end, with 6 ribs each
salt and pepper
balsamic vinegar
3 tbsp oil
For the aubergines:
2 tbsp oil
2  aubergines, diced
1 tsp ground coriander
1 tsp ground cumin
1  chili pepper, chopped
1 tsp grated ginger
3 clove(s) garlic, minced
1 large can(s) tomatoes, diced
wine vinegar
sugar
salt and pepper

Instructions

In a large skillet, heat the oil and sauté the aubergines. Season with coriander, cumin, chili, garlic and ginger. Cook stirring for 3-4 minutes. Add the tomatoes and cook for some more minutes. Season to taste with vinegar, sugar, salt and pepper.

Preheat the oven to 200°C.

In a large ovenproof grill pan heat the oil and sear the 2 racks of lamb all around. Deglaze with a shot of water. Transfer into the oven and roast for 20 minutes. Take out of the oven and allow to rest for 5 minutes.

Cut each rack of lamb into 6 cutlets. Serve on warmed plates together with the aubergines.
