Rack of lamb with aubergines recipe details
Ingredients
2 | rack of lamb, best end, with 6 ribs each |
salt and pepper | |
balsamic vinegar | |
3 tbsp | oil |
For the aubergines: | |
2 tbsp | oil |
2 | aubergines, diced |
1 tsp | ground coriander |
1 tsp | ground cumin |
1 | chili pepper, chopped |
1 tsp | grated ginger |
3 clove(s) | garlic, minced |
1 large can(s) | tomatoes, diced |
wine vinegar | |
sugar | |
salt and pepper |
Instructions
In a large skillet, heat the oil and sauté the aubergines. Season with coriander, cumin, chili, garlic and ginger. Cook stirring for 3-4 minutes. Add the tomatoes and cook for some more minutes. Season to taste with vinegar, sugar, salt and pepper.Preheat the oven to 200°C.
In a large ovenproof grill pan heat the oil and sear the 2 racks of lamb all around. Deglaze with a shot of water. Transfer into the oven and roast for 20 minutes. Take out of the oven and allow to rest for 5 minutes.
Cut each rack of lamb into 6 cutlets. Serve on warmed plates together with the aubergines.
