Simple to make potato salad that goes great with fried chicken on Sunday afternoons. Even better at the race track.
Ready in: 2 hours 35 mins

Ingredients

Serves: 4
  • 8 new potatoes
  • 1 green bell pepper
  • 1 Vidalia onion
  • 1 cup mayonnaise
  • 1 teaspoon salt
  • 1 teaspoon spicy mustard
  • 4 tablespoons celery seed
  • pepper to taste

Preparation method

Prep: 2 hours 20 mins | Cook: 15 mins

1. In a medium pot, bring salted water to a boil. Cube potatoes and add to boiling water and cook until fork tender. Set aside and cool.
2. Dice bell pepper and onion into 1/4 to 1/2 inch size pieces. Combine all ingredients with cooled potatoes and mix well. More or less mayo may be needed depending on your taste. Chill in refrigerator at least 2 hrs. before serving. Salt and pepper to taste.
