Ingredients
Makes: 1 pie- 1 baked pie shell
- 1 1/4 cups milk
- 3/4 cups half & half
- 5 egg yolks
- 1/2 cup sugar
- 1 tablespoon butter
- 3 tablespoons cornstarch
- 1 teaspoon vanilla
- 1 teaspoon vanilla extract
- 2/3 cup peanut butter
- 5 egg whites
- 1/8 teaspoon cream of tartar
- 2/3 cup sugar
Preparation method
Prep: 10 mins | Cook: 55 mins | Extra time: 45 mins, cooling1. Preheat oven to 350 degrees F.
2. Mix milk and half & half in a bowl.
3. Put 1/2 cup sugar, and 1 tablespoon of butter in a heavy saucepan. Add 1 3/4 cup of the milk mixture. Heat on low to warm it up, but don’t bring it to a boil.
4. In the bowl with the remaining milk mixture, add yolks, then stir in cornstarch. Add to warm milk mixture. Cook over medium heat, stirring constantly, until thickened.
5. Remove from heat and add the vanilla and peanut butter. Stir until smooth. Pour into baked pie shell.
6. In large mixing bowl, beat egg whites with cream of tartar until stiff and glossy. Spread over pie, sealing edges of the pie with your fingers.
7. Bake about 35 minutes, until meringue is browned. Let cool for about 45 minutes, then serve.
