Quick tomato sauce recipe details

Instructions
Heat the oil in a pan and gently fry the garlic until lightly coloured, add basil and tomatoes. Squash up tomatoes as much as possible in the pan using the back of a spoon, or roughly but carefully cut with a sharp knife (not in a non-stick pan). Season with salt and pepper and cook gently until boiling.Place a large, course sieve over a bowl and carefully pour in the sauce. Using the back of a spoon, push through as much of the sauce as possible. Discard any hard lumps, large bits of basil or garlic and scrape as much of the sauce from the back of the sieve as possible.
Pour the sauce back into the pan and simmer on reduced heat for about 5 minutes to enhance the flavours. Store surplus in a clean container in the refrigerator for up to a week or freeze until required.
Makes about 500ml of sauce. Use as much of the sauce as you wish spread over a pizza base. I have specified that it is sufficient for 8 servings, but may serve more or less, depending upon the size of your bases and the amount you choose to use.
Add toppings of choice, good mozzarella cheese and additional torn basil if desired.
