Quick gnocchi with vegetables and creme fra che sauce recipe details
Ingredients
500 g | gnocchi |
2 stalks | leeks |
5 | carrots |
300 ml | vegetable stock, |
500 g | half-fat Crème fraiche |
pepper | |
vegetable oil |
Instructions
Add the gnocchi into a pot of boiling water. Simmer until they start appearing at surface. Then strain and put aside.In the meantime, wash and cut the leeks and carrots into slices.
In a large pan quickly fry off the leeks and carrots with a bit of oil. Add the vegetable stock and let it simmer for a few minutes until the vegetables start to soften a bit. Turn off the heat and add the creme fraiche. Season to taste. Add the Gnocchis, stir and let it sit for a couple of minutes. It maybe required to thicken the sauce a bit.
Serve with sausages, Gammon or turkey steaks. Alternatively serve it as is – a vegetarian main course.
This dish can be varied, add some sweetcorn or fry it off with turkey mince.
