- Ingredients:
- 8 ounces plain Monterrey Jack cheese
- 8 ounces Monterrey Jack Cheese with jalapeño peppers
- 1 can mushrooms (drained)
- 1 pint (2 cups) cottage cheese
- 1 teaspoon baking powder
- 1 onion
- 10 eggs
- 2 cans chopped green chilies
- 1/2 cup flour
- 1 teaspoon salt
- 1 can Spamham product
Grate both cheeses and combine with eggs, mushrooms, chilies, and cottage cheese. Then combine flour, baking powder, and salt and fold into the above mixture. Saute onion and Spamham product in bacon grease and add to mixture. Bake at 350 degrees until set. (30 to 35 minutes)
