Ingredients
100 g | soft butter |
100 g | sugar |
6 tbsp | single cream |
1 tsp | lemon juice |
2 medium | eggs |
225 g | flour, sieved |
½ tsp | baking powder |
100 g | currants |
1 tbsp | milk |
Instructions
Preheat the oven to 190°C. Put 18 paper baking cases into 18 muffin cups.Whisk the butter with the sugar until creamy. Whisk in the single cream and the lemon juice. Whisk in the eggs, one at a time. Add the flour, baking powder, currants and some milk and mix until well combined.
Fill the batter into the baking cases and bake for 20-25 minutes until golden brown.
Remove from the oven and allow to cool in the paper baking cases.
