Purple potato soup recipe details
Ingredients
250 g | purple potatoes (e.g. La Vitelotte), cooked |
200 g | single cream |
1 clove(s) | garlic |
250 ml | vegetable stock |
1 small | zucchini |
1 tbsp | rapeseed oil |
salt and pepper |
Instructions
Dice zucchini. Heat rapeseed oil and brown zucchini, season with salt and pepper.Heat potatoes in the vegetable stock, add garlic. Purée potatoes with vegetable stock, add single cream, bring to the boil.
Divide in two soup plates. Add browned zucchini. Serve with bread or baguette.
