Pumpkin stew recipe details
Ingredients
1 ½ kg | pumpkin |
2 tbsp | vinegar |
40 g | butter |
1 | onion |
2 tbsp | dill, chopped |
3 tbsp | fresh lemon juice |
salt and white pepper | |
some | sugar |
125 ml | meat stock |
2 | bell peppers, red and yellow |
150 g | sour cream |
40 g | flour |
dill weed, to garnish |
Instructions
Peel and seed the pumpkin and cut in stripes. Add salt and vinegar and let soak for 15 minutes.Sauté the finely diced onion and the chopped dill in a pan in hot butter for a minute. Add lemon juice, sugar, salt, pepper the finely sliced bell peppers and the pumpkins. Cook stirring for 5 minutes, then add the stock and steam over low heat until the pumpkin is very soft.
Mix the flour with the sour cream and and stir the mixture into the vegetable stew. Season to taste with salt and pepper. Cook for another 5 minutes. Serve garnished with dill.
