Pumpkin salad recipe details
Ingredients
400 g | pumpkin |
4 | gherkins |
2 tbsp | vinegar |
4 tbsp | oil |
1 | onion |
salt and pepper | |
sugar | |
3 | tomatoes |
1 bunch(es) | chives, chopped |
Instructions
Peel and clean the pumpkin and cut the pulp into thin strips. Place into a salad bowl. Cut the gherkins, onion and tomatoes into small pieces and add to the pumpkin.In another bowl, whisk the vinegar with oil, salt, pepper and sugar until emulsified. Pour the dressing over the salad ingredients, toss and leave to soak in a cool place for at least 6-8 hours.
Check seasoning and adjust if necessary. Serve sprinkled with chives.
