- Ingredients
- 1 cup sugar
- 1 cup water
- 1 Tablespoon vanilla
- 3 apples (Granny Smiths preferred), peeled and cored
- 1/2 cup pistachio nuts, shelled, peeled, and chopped fine
Bring sugar and water to a boil in heavy pan large enough to hold apples in one layer. Stir in vanilla, lower heat to medium-low, and add apples. Cook and baste with syrup for approximately 10 minutes or until tender but still holding their shape. Remove and cool on a plate.
Allowing half an apple per person, slice each apple into 1/4-inch slices and roll the outside edge of each slice in the chopped pistachios. Pool some raspberry sauce on the bottom of each plate, and arrange the apple slices in a fan shape over the sauce. Garnish with a fresh raspberry and a mint leaf.
