Pumpkin ginger snap dessert recipe details
I made this up for a Thanksgiving party when I wanted something easy for me and good for my guests.
Ready in: 1 hour 30 mins
Ingredients
Serves: 12- 1 (14 ounce) package ginger snaps
- 2 tablespoons butter/margarine
- 1 (29 ounce) can pumpkin pie filling
- 2 packages vanilla pudding mix
Preparation method
Prep: 1 hour 30 mins1. Crush half of the contents of the ginger snaps into desired size crumbs for crust.
2. Melt butter and add to ginger snap crumbs, mixing throughly.
3. note: with finely crumbled ginger snaps more butter may be necessary.
4. Press ginger snap crumbs into bottom of 8 x10 dish.
5. In large bowl combine pumpkin pie filling and vanilla pudding mix until pudding mix is completely incorporated.
6. note: pumpkin puree can be substituted for pumpkin pie filling for a less intense flavor or additional spices can be added to taste.
7. Pour pumpkin pie mixture over ginger snap crust.
8. Sprinkle unused crust crumbs over top or crumble additional cookies to sprinkle over top.
9. Refrigerate until ready to serve, preferably at least as long as pudding package recommends for making pudding.
