Ingredients
Serves: 4- 1 tablespoon red curry paste
- 1 (12 oz) can coconut milk
- 1 teaspoon basil
- 2 tablespoons brown sugar
- 3 tablespoons fish sauce (optional)
- 1/2 cup vegetable or chicken broth
- 1 sugar pumpkin, deseeded, peeled, and cut into 1-inch cubes
- 1 large onion, chopped
Preparation method
Prep: 10 mins | Cook: 30 mins1. In medium saucepan, stir red curry paste into coconut milk. Heat just until boiling, stirring occasionally.
2. Add the remaining ingredients. Heat to boiling. Lower heat and simmer for 20 minutes or until the pumpkin is soft. Serve over rice.
