Pumpkin custard recipe details
Ingredients
450 g | pumpkin, peeled, cut into chunks, cooked, pureed |
60 g | brown sugar |
1 tsp | Pumpkin Pie Spice |
¼ tsp | cayenne pepper |
1 tsp | vanilla extract |
60 ml | orange juice |
4 medium | eggs, separated, beaten |
300 ml | evaporated milk |
Instructions
Preheat oven to 180°C. Place 6 custard cups in a baking dish.Beat egg whites until stiff. Cook pumpkin until tender and puree in a blender.
In a bowl mix together the brown sugar, pumpkin pie spice, cayenne pepper, vanilla extract, orange juice, and lightly beaten egg whites. Stir in the pumpkin puree and evaporated milk and mix until well blended.
Ladle the custard into each cup, pour boiling water around the cups and bake the custards for about 45 minutes.
Remove the custard cups from the water bath and leave to cool on a wire rack. Refrigerate before serving.
