Pumpkin curry recipe details
Ingredients
1 kg | pumpkin, peeled, seeds removed and diced |
1 stalk(s) | leek, sliced |
1 | onion, chopped |
1 | orange, peeled and sliced |
1 | banana, sliced |
4 tbsp | oil |
vegetable stock | |
raisins | |
salt and pepper | |
ginger powder | |
200 g | sour cream |
1 tbsp | curry powder |
Instructions
In a saucepan, sauté the onion in the oil until lucent. Add pumpkin, leek and raisins and cook stirring for a minute or two. Season with salt , pepper, ginger and curry. Add stock until all is nearly covered and bring to a boil. Cover the pan with a lid and cook over low heat for 15 minutes or until the pumpkin is tender. Fold in banana, orange and the sour cream, switch off the heat and leave the pan covered on the hob until all is hot.Check seasoning and adjust if necessary.
Serve with fresh French bread.
