Northwest salmon breakfast pie details
- Ingredients
- 1 prepared pie crust
- 12 ounces fully cooked salmon
- 1 large onion, chopped (1 cup)
- 1 clove garlic, minced
- 3 Tablespoons butter
- 5 beaten eggs
- 2-1/4 cups dairy sour cream
- 1/4 cup all-purpose flour
- 1-1/2 cups shredded Swiss cheese
- 1 teaspoon dried dillweed
Bake pie crust at 400 degrees for 8 minutes and remove from oven. Remove any skin and bones from salmon; flake into small pieces. Saute onion and garlic in 3 tablespoons butter until tender. In a bowl combine eggs, sour cream, and 1/4 cup flour. Stir in salmon and onion mixture. Stir in 1 cup of the Swiss cheese and dill. Pour filling into the partially baked crust. Sprinkle with the remaining cheese. Bake in a 375-degree oven for 40 to 45 minutes. Cover with foil the last 15 minutes.
