Pumpkin chutney recipe details
Ingredients
700 g | pumpkin, skinned, seeded and cubed |
300 g | pineapple, fresh cut in cubes |
400 g | onions, finely chopped |
200 g | capsicum, red, seeded and cut into dices |
100 ml | apple juice |
250 ml | apple vinegar |
40 g | salt |
1 tsp | curry powder |
1 tsp | cayenne pepper |
1 tsp | pepper, grounded |
1 tsp | cumin, grounded |
1 tsp | coriander, grounded |
4 leaves | bayleaf |
250 g | sugar |
Instructions
Mix all ingredients in a large pot and bring to the boil and simmer for 20 minutes, stirring occasionally.Remove bay leaves, add sugar and vinegar, cover, increase heat and boil for 8 minutes, stir occasionally.
Fill hot into twist-off glasses.
