Pumpkin bread pudding recipe details
- Ingredients
- 6 slices white toast, buttered
- 1/3 cup raisins
- 1-2/3 cups skim milk
- 1 cup pureed pumpkin
- 3 eggs
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg, freshly grated if possible
Place toast slices in buttered 7 x 10 x 1-1/2 inch pan, overlapping slightly. Sprinkle with raisins. Combine the remaining ingredients. Pour pumpkin mixture over toast slices. Bake at 350 degrees for 35 to 40 minutes. Serve warm or cold, with cream if desired.
