Provencal style skewers for bbq recipe details
Ingredients
1 small | aubergine |
2 small | zucchini |
1 | fennel |
2 | green bell peppers |
12 | spring onions |
3 | beef tomatoes |
2 tbsp | olive oil |
1 tsp | herbs de provence |
salt and black pepper | |

Instructions
Cut the aubergine in 1 cm thick slices and sprinkle well with salt. Allow to soak for 30 minutes, then rinse the slices with cold water and pat them dry. Cut the zucchini in slices and the fennel and bell peppers in bite-sized pieces. Quarter the beef tomatoes and peel the onions.Spike the vegetables in turn on the skewers.
Mix the olive oil with the herbs and the spices and brush the skewers with the mixture.
Grill the skewers for approximately 15 minutes.
